Tortilla Soup

Tortilla Soup

serves: 5

Quite literally the easiest soup in the world and one of the best. I also have to wonder if left over turkey would be good in this? Worth a try I think!

1 large chopped onion
1 tablespoon oil
2 or 3 cups chopped cooked chicken
1 (10oz.) can tomatoes
1 (10oz.) can chilies
2 (15oz.) cans pinto beans, drained and rinsed
1 (13.25 oz.) can cream-style corn
1 (14.5 oz.) can chicken broth
1/2 teaspoon pepper
1 tablespoon chili powder
1 teaspoon sugar
1/2 teaspoon salt

Garnish Ingredients (optional):
2 or 3 crispy tortilla chips, crushed
Fresh Cilantro
Dollop of Sour Cream
Chopped Avocado
Chopped Tomato

1. In a 4 quart stockpot, sauté the onion in oil until softened.
2. Add the chicken, tomatoes, and green chilies, beans, corn, chicken broth, pepper, chili powder, sugar and salt.
3. Heat to boiling and simmer for 15 minutes.

Our favorite garnishes are Chips, Sour Cream and Avocado. Canned chicken also works well as a quick and easy replacement. (Costco’s Canned Chicken is best.)
